Squished tomato pasta sauce
Ingredients

12 cherry tomatoes
2 ordinary tomatoes, halved
4 basil leaves
small bunch chives
8 black or green olives, stoned (optional)
olive oil, for drizzling
200g pasta, cooked and kept warm
cheddar or parmesan, grated
Method

Put the cherry tomatoes into a large bowl, reach down into the bowl and squeeze each one hard until it bursts (mind out, they’ll squirt!). Pull the tomatoes into pieces.
Squeeze the halved tomatoes on a lemon squeezer to make as much juice as you can. Pour this into the bowl. (Grown-ups, the squeezed halves can be used up in a stew or soup.)
Snip the basil and chives into the bowl using your scissors, or tear them into pieces. Then, if you are using them, snip or pull the olives in half and throw them in, too.
Add a dribble of olive oil, then ask your grown-up helper to put the cooked pasta into two bowls, spoon your sauce on top and sprinkle with the cheese


Courgette, potato & cheddar soup
Ingredients

500g potatoes, unpeeled and roughly chopped
2 vegetable stock cubes
1kg courgettes, roughly chopped
bunch spring onion, sliced - save 1 for serving, if eating straight away
100g extra-mature cheddar or vegetarian alternative, grated, plus a little extra to serve
good grating fresh nutmeg, plus extra to serve
Method

Put the potatoes in a large pan with just enough water to cover them and crumble in the stock cubes. Bring to the boil, then cover and cook for 5 mins. Add the courgettes, put the lid back on and cook for 5 mins more. Throw in the spring onions, cover and cook for a final 5 mins.
Take off the heat, then stir in the cheese and season with the nutmeg, salt and pepper. Whizz to a thick soup, adding more hot water until you get the consistency you like. Serve scattered with extra grated cheddar, spring onions and nutmeg or pepper. Or cool and freeze in freezer bags or containers with good lids for up to 3 months.

Apple Sauce

Prep time: 10 minutes

Ingredients:

2 small red apples
2 tbsp. lemon juice
2 tsp. sugar
2 pinches of cinnamon
Utensils:

knife (you'll need help from your adult assistant)
blender or food processor
measuring spoons
serving bowls
Directions:

Peel the apples and cut them into small pieces. Throw out the core.
Put the apple pieces and lemon juice into the blender or food processor. Blend until the mixture is very smooth.
Pour the mixture into two small bowls and stir in the sugar and cinnamon.
Enjoy your awesome applesauce!
Serves: 2

Creamy Cheesy Cucumber

prep time: 5-10 minutes

What you need:

¾ cup light cream cheese, slightly softened
half a large cucumber, thinly sliced
8 slices of whole-wheat bread
Equipment and supplies:

Large knife
Cutting board
Plastic wrap (optional)
What to do:

Spread each slice of bread with cream cheese (about 3 tablespoons per sandwich).
Place about 4 cucumber slices on 4 of the slices of bread and top with remaining bread slices.
Cut into quarters and serve immediately or wrap sandwiches and save for later.

Choclate Sweetheart parfait

Prep time: 5 minutes

What you need:

½ teaspoon cocoa powder
1 teaspoon vanilla extract
2 teaspoons honey
1½ cups low-fat or fat free Greek yogurt
2 cups fresh or frozen raspberries
¼ cup shaved dark chocolate or chocolate chips
Equipment and supplies:

Measuring cups and spoons
Medium mixing bowl
Whisk or fork
Tall glasses, preferably clear
What to do:

In medium bowl, whisk together cocoa powder and vanilla.
Add honey and yogurt and stir until they're well combined with cocoa mixture. It will turn light brown.
Spoon 2 tablespoons of yogurt mixture into the bottom of four clear glasses.
Top with some raspberries and repeat until all of the yogurt and raspberries are used up.
Sprinkle each parfait with chocolate shavings.
Serve or refrigerate until ready to serve.
